Chinese-style Spare Ribs Marinade

This recipe for a marinade with a kick was contributed by James Fortier for our Halloween competition to find a devilishly spicy marinade.


  • 1 rack of baby back ribs, cut into individual ribs
  • 4 cloves of garlic, crushed
  • 6 tablespoons of dark soy sauce
  • 1 tablespoon of brown sugar
  • 1 tablespoon of sesame oil
  • 1 teaspoon of Chinese 5 spice
  • 2 tablespoons of hoisin sauce
  • 1 tablespoon of ketchup
  • 2 shots of Tabasco (or to taste)


    1. Mix all the ingredients together except the ribs.
    2. Add the ribs and marinate for 6 to 8 hours.
    3. Preheat the BBQ to 175 Celsius.
    4. Place the ribs away from the direct heat and cover with hood..
    5. Cook on roasting rack for 1 hour.
    6. Place the ribs over direct heat for a few minutes for to sizzle and sear them.
