Cedar Wrapped Fish with Sweet Pepper Relish

2 teaspoons olive oil
2 garlic cloves, minced
3/4 cup red bell pepper, chopped
1/2 cup yellow bell pepper, chopped
2 tablespoons kalamata olives, chopped
1 tablespoon capers
2 teaspoons fresh thyme leaves, roughly chopped
Four 6 or 8 ounce fish fillets (such as halibut, salmon, swordfish)
Eight 6” or four 10” Fire & Flavor cedar papers

Place papers in a shallow dish of water for soaking.  Preheat grill or grill pan to medium heat.

2. Heat oil in a skillet set over medium heat, add garlic and peppers and sauté for 3-4 minutes.  Remove from heat, stir in olives, capers, thyme, and season with salt and pepper; set aside.  Season fish with salt and pepper and place fillet in the center of each paper. If using six inch papers, cut fish in half horizontally and place each half in center of paper. Top with heaping spoonful of pepper relish.  Fold edges of papers over the fillets and secure with cotton string.

Place packets seam side down on grill or grill pan; cook 3-4 minutes per side or until done. Serve immediately.
